Traditional Uzbeki Samarkand flatbread is known for its distinct taste and quirky features. This round bread is made from flour and water or milk. It looks a bit like a bagel and is dry, dense and has a very long shelf life.

These recipes have been made for centuries and traditional methods are still used in many Uzbek bakeries.

Traditionally, the bread is baked on the walls of a tandoor oven and has sesame seeds in the centre. According to Taste Atlas, some of the locals joke that the ‘air of the city is the bread’s main ingredient.’

Samarkan bread is often gifted as a present in a tradition that has lived on for many years. There are many different variations of this bread. There is a different recipe for the bread in every region and they each have original decorations and sizes.

Watch the fascinating way that this bread is made in a video shared by Food Travel, including the impressive agility the bakers have to stick the bread inside the oven walls.
