Traditional South African malva pudding recipe Ingredients for the batter 1 cup sugar 1 egg 1 Tablespoon apricot jam 1 cup flour 1 teaspoon bicarbonate of soda generous pinch salt 1 Tablespoon butter 1 teaspoon vinegar 1 cup milk Ingredients for the sauce 1 cup cream 4 oz (125g) butter 1 cup sugar 1/2 (half) cup hot water Method Beat the egg and sugar well in a mixer (if you have one – otherwise, just do it by hand). Add the jam. Sift flour, bicarb and salt. Melt the butter and add the vinegar. Add liquids to egg mixture alternately with the flour. Beat well and bake in a covered dish at 180 degrees for 45 minutes to an hour. Melt together the ingredients for the sauce and pour over the pudding as it comes out of the oven. The sauce ingredients can be halved if you wish to be a touch healthier! For something different, have a look at this recipe for Amarula malva pudding.
