Home-made apricot chutney recipe Posted on 9 February 2011 Ingredients: 100g dried apricots 1 cup sugar 1 cup vinegar 1 medium onion, chopped 1 clove garlic, crushed 1 tsp mustard seeds, crushed 1/2 Tbl ground ginger 3/4 Tbl ground coriander 1 tsp ground cinnamon 1/2 tsp paprika 1/2 Tbl salt Method: Place apricots in a pot and cover with water (just enough to cover all of the apricots) and stew until tender. In a separate pot, boil the onion and garlic in the vinegar for about 10 minutes. Add the sugar, salt and spices to the apricots. Add the apricot mixture to the onion mixture and cook over a low heat until thickened (about 1 hour). Store the chutney in a sterilised jar. Goes well with home-made bobotie. Also delicious on braaibroodjies.
