Baked fruit Posted on 17 March 2009 There’s nothing quite like baked fruit to ward off the chills. And with the ominous weather we’ve been experiencing of late, here’s a recipe to keep cold away. Lots of you have been asking me for dessert recipes lately, so here’s one that easy to do and will see you through the chilly months. You’ll need: Firm fresh fruit – peaches, nectarines, pears or apples will do. One per person. 200ml red wine per fruit 1 tsp ground cinnamon 1 tsp ground nutmeg 1 tsp whole cloves 2 tblsp brown sugar Vanilla ice cream or whipped cream Pre-heat your oven to 220 degrees Celsius. Halve or quarter your fruits depending on your preference and place in a baking dish. Pour the wine into the dish, making sure that the tops of the fruits are wet. Sprinkle the spices and sugar over the top and put in the oven, uncovered, for 30 to 40 minutes or until soft. Serve the fruits in a bowl with a healthy dollop of ice cream or whipped cream and drizzled with the sauce from the baking dish. (This recipe also works really well with bottled Gluwein instead of wine – sometimes available from Woolworths) Delicious! Yours in food Leigh Have you tried this recipe?
