The in-house chocolatier, Vicki Bain, trained for 15 years in Belgium. At the café’s Chocolate Lounge, you can indulge in delicious handmade chocolate while watching new batches being made. Chocoloza uses fair-trade and organic ingredients including cocoa butter, hence the branding of its products as “naturally-African”. There is also no palm oil in Chocoloza products. View this post on Instagram The technique of moulding (in this case Creamy Coffees) is one that takes a long time to master. It starts with getting your chocolate perfectly tempered of course, but then we adjust the technique for each mould because the shapes are different and require a slightly different handling. We’ll then also tap it out as fast as possible to get a nice, thin shell of chocolate that gives way to the smooth, filling on the inside.
